Restaurant Pavus in the Grad Tabor castle, Lasko

Overlooking the town of Lasko, you find the towers of Grad Tabor, an 11th century castle owned by the local brewery. Since 2011, Chef Marko Pavcnik is running on the idyllic setting, restaurant Pavus. The Chef is famous in Slovenia of his television shows but he is also setting his mark outside Slovenia. He is a member of Jeunes Restaurateurs D'europe, was awarded a 15/20 in the Gault Millau and is honored as the best Chef of his country.

The combination of the ingredients and presentation were impressive. We selected the degustation menu and were served: octopus with shrimp, duck, river forel soup, a mushroom salad, rabbit ravioli, beef with green asparagus and dessert of chocolate and beer.

The beef was incredible. A perfect piece of meat grilled with herbs in the Green Egg. You could see the Chef at work with the Green Egg on the terrace. He used it for his meat and to roast vegetables. It was an unexpected high level of cooking and a great experience to visit Restaurant Pavus.

Met zicht over de stad Lasko staan de torens van Grad Tabor, een kasteel uit de 11de eeuw, momenteel in eigendom van de lokale brouwerij. Sinds 2011, leidt Chef Marko Pavcnik hier Restaurant Pavus. De beroemde televisie chef uit Slovenië laat nu ook van zich horen in het buitenland. Hij is lid van Jeunes Restaurateurs D'Europe en kreeg een 15/20 in de Gault Millau. Tevens werd hij gewaardeerd als beste Chef van Slovenië.

Combinaties van ingrediënten en bord presentatie waren indrukwekkend. We kozen het degustatiemenu en kregen: octopus met garnalen, eend, rivierforel soep, een paddenstoelen salade, een konijn ravioli, runderfilet met groene asperges en een chocolade bier dessert. 

De ossenhaas was ongelooflijk, een perfect stukje vlees, gegrild met kruiden in het "Groene Ei". Je kon de Chef met het "Groene Ei" in actie zien op zijn terras. Hij gebruikte het voor het roosteren van vlees en groenten. Het niveau van Restaurant Pavus was boven verwachting hoog en een heel leuke ervaring.

  2. Bijzondere plek toch, precies. Mooie foto van de jonge dame, maar haar voetjes zijn afgeknipt, dat is wel jammer. Klinkt ook goed om daar iets te gaan eten.
