Kristel’s grandparents celebrate their Diamond wedding anniversary (60 years)

6 October 1953, exactly 60 years ago, Robert Vandensande and Rosa Elsen got married. We added a picture of the wedding day to show our young couple to you. But let’s go back to the present time, Kristel prepared a cozy family party with her grandparents, parents and brother.

On the second picture you see how time changes a person, both Robert and Rosa are now more than 80 years old and still in good physical health. Robert gives a signal saying you don’t know what we have seen in 60 years time and we are still happy. We take some garden shots with the family and Rosa plays with our Golden Retriever in the grass.

Let’s start to cook. When Kristel shows her pan like that you need to be careful. The lemon is used for the tuna starter with red peppers. As main course we had Coq au Vin with oven roasted potatoes. Just look at Robert’s face when the celebration cake is cut. A great afternoon never to forget.

Exact 60 jaar geleden, op 6 oktober 1953 trouwden Robert Vandensande en Rosa Elsen. We voegen er een foto van de huwelijksdag aan toe en kijken hoe het jonge koppel er toen uit zag. Maar laat ons terug keren naar het heden, Kristel organiseerde een gezellig verjaardagsfeest met haar grootouders, ouders en broer. 

Op de tweede foto zie je hoe de tijd een persoon verandert, Robert en Rosa zijn nu beiden in de 80 en nog steeds in goede gezondheid. Robert maakt een teken met zijn hand, we hebben heel wat meegemaakt in 60 jaar huwelijk en zijn nog steeds gelukkig. We nemen nog enkele familiefoto’s in de tuin en Rosa speelt met onze Golden Retriever in het gras. 

Laat ons koken. Wanneer Kristel haar pan zo vast heeft moet je voorzichtig worden. De limoen werd gebuikt in het voorgerecht van tonijn met paprika’s. Het hoofdgerecht was Coq au Vin met oven geroosterde aardappelen. Robert zijn uitdrukking is goud waard bij het aansnijden van de feeststaart. Een prachtige namiddag om nooit meer te vergeten.

Home cooking special 3 – Tuna – Lobster - Deer

My wife Kristel is a fabulous cook and occasionally we invite friends for dinner and wine tasting. The creations served on those evenings have been tried out several times and fine tuned to perfection. The advantage is that I am eating several versions of these super ingredients before our guests are invited. So that’s a lot of fun.

This is our fourth Home Cooking Article on the blog and we hope to publish a few more in the future. Kristel has to find enough inspiration before we can do this again with new ingredients. On this evening we focussed on fish and game products. The description of the plates is mentioned below each picture.

I forgot to take pictures of the wine bottles but we started with Gosset Champagne, the oldest Champagne house in the world. For the fish and shell food we opened a Merseult of the Bichot house and with the meat a bottle of excellent Montus. Just for your information in the trial version I was not allowed to open the same bottles.

Mijn vrouwtje Kristel is een fantastische kokkin en af en toe nodigen we vrienden uit voor een etentje en wijnproeverij. De creaties die worden geserveerd werden reeds verscheidene keren uit geprobeerd en verfijnt tot de perfectie. Het voordeel is dat ik meerdere versies van deze goede ingrediënten kan eten vooraleer de gasten uitgenodigd worden. Dat is dus heel leuk. 

Dit is ons vierde thuis kookartikel op de blog en hopen dat er nog vele volgen in de toekomst. Kristel moet wel genoeg inspiratie vinden om nieuwe gerechten uit de mouw te schudden. Op deze avond hebben we ons gericht op vis en jacht producten. De omschrijving van ieder gerecht is terug te vinden onder de foto. 

Ik vergat foto’s te nemen van van de wijn flessen maar we begonnen met Gosset Champagne, het oudste Champagne huis ter wereld. Bij de vis en schaaldieren serveerden we een Merseult van het huis Bichot en bij het wild een uitstekende Montus. Voor u informatie, tijdens de proefsessies was het niet toegelaten dezelfde wijnen te openen.

Home cooking special 2 – Scallops – Pigeon - Tiramisu

In our “Home cooking special”series which we just started, we are trying to combine food with wine. It is not always easy to find the right combination that improves the taste of the food and the wine. Kristel focuses on the food product quality, spices, taste, cuisson and presentation. I am trying to select the appropriate wine, right glass shape and the serving temperature.

In onze “Home cooking special” reeks, waarmee we net gestart zijn, proberen we goede combinaties te vinden van gerechten met wijn. Het is niet altijd gemakkelijk de smaak te verbeteren van zowel het eten als de wijn door de juiste combinatie te kiezen. Kristel legt zich toe op de gerechten, productkwaliteit, kruiding, smaak, bakgraad en presentatie. Ik probeer een geschikte wijn te selecteren, met juiste vorm van glas en serveer temperatuur. 

As starter, Kristel prepared a soup of “Jerusalem artichoke” with live scallops. She baked them very short (less then a minute) in a hot pan with oil and butter. Small pieces of the “Jeruzalem artichoke” were turned into a brown crispy. This is nice for the presentation and provides a stronger taste. For the wine selection, we selected the Marea, a Sauvignon Blanc from the Luis Felipe Edwards Estate in Leyda Valley Chili. It has a high freshness and is aromatic. The house of Luis Felipe Edwards is one of our favourites from Chili, one of the so called new world wine countries. As glass we used a Riedel Souvignan Blanc and the wine was served at 12 degrees.

Als voorgerecht maakte Kristel een soep van aardpeer met levende St. Jacobsnoten. Ze heeft deze zeer kort aangebakken (minder als een minuut) in een hete pan met olie en boter. Kleine stukken aardpeer werden omgetoverd in krokantjes. Het is mooi voor de presentatie en een sterkere smaak. Als wijnselectie ging ik voor de Marea, een Sauvignon Blanc van het huis Luis Felipe Edwards uit Chili. De wijn heeft een hoge frisheid en een redelijk sterk aroma. Het huis Luis Felipe Edwards is één van onze favoriete wijnhuizen uit Chili, een nieuwe wereld wijnland. Als glas namen we een Riedel Sauvignon Blanc en de wijn werd geserveerd op 12 graden.

scallopsThe main course was pigeon breast with different flavours of “Cucurbita moschata” (or butternut, a type of light sweet pumpkin). The pumpkin was served in a mouse, small baked pieces and a curl marinated in rice vinegar. For the wine we looked into the Saint-Émilion region which is a small part of Bordeaux in France. This is one of the most exclusive wine regions in the world. Some of the wines are too expensive but we found an affordable “Chȃteau La Dominique” Saint-Émilion Grand Cru Classé of 2004. The wine had to be decanted because of the age. We separated the sediment from the wine and let it breath for a while. As glass we used a Riedel Bordeaux and the wine was served at 18 degrees.

Het hoofdgerecht was duivenborst met verschillende smaken van Butternut (een licht gezoete pompoen soort). De butternut werd geserveerd in een zalfje, kleine opgebakken stukjes en krulletjes gemarineerd in rijstazijn. Voor de wijnselectie zochten we in de Saint-Émilion regio wat een deel van Bordeaux is in Frankrijk. Het is één van de meest exclusieve wijnregio’s in de wereld. Sommige van deze wijnen zijn echt te duur, wij kozen echter voor een betaalbare “Chȃteau La Dominique” Saint-Émilion Grand Cru Classé uit 2004. Omwille van de leeftijd diende we wijn te worden gedecanteerd. Hiermee scheiden we het bezinksel van de wijn en laten we het ademen. Als glas kozen we voor een Riedel Bordeaux en de wijn werd geserveerd op 18 graden.

We end the dinner with a small Tiramisu accompanied by a sweet sherry, Lustau East India. It is best to serve the sherry around 16 degrees, a little chilled. We used a normal port glas.

We eindigen ons etentje met een kleine Tiramisu begeleid door een zoetere sherry, Lustau East India. Deze wordt best geserveerd rond 16 graden, een beetje gekoeld. We schonken het in een normaal porto glas.

Home cooking special 1 - Langoustine - Redfish & Nord Sea shrimps

We regularly write restaurants reviews but almost never about home cooking. At the start of a nice home dinner, I decided to start writing a home cooking series. I am lucky that Kristel is such a good cook.

As a started we had langoustines on a bed of cucumber and apple, with a dressing of olive oil, pepper, salt, lemon and vanilla. They inspiration came from a starter prepared in the TV program “Master Chef for Kids”.

The main course was filet of Redfish in combination with fresh hand pealed Nord Sea shrimps. We added mash potatoes prepared with Karnemilk and a heart of lightly boiled egg. This is a slightly changed version of a dish from two star chef Stephane Buyens.

We are two people so we selected only one bottle of white wine. The wine pairing was the best with the fraicheur of starter. We opened an Italian Corte Ibla from Sicily, a blend of Grillo grapes and French Viognier grapes.

Regelmatig schrijven we over onze restaurant bezoeken maar bijna nooit over thuis bereide gerechten. Bij de start van een leuk etentje, besloot ik aan te vangen met een artikel reeks over thuis koken. Ik heb geluk dat Kristel zo’n goede kok is.

Als voorgerecht begonnen we met langoustines op een bedje van komkommer en appel, daarbij een dressing van olijfolie, peper, zout, limoen en vanille. De inspiratie kwam van een voorgerecht uit het TV programma “Master Chef for Kids”.

Als hoofdgerecht kozen we voor Roodbaars filet in combinatie met zelf gepelde verse grijze Noordzee garnalen. Hierbij serveerden we karnemelkstovers of een puree met karnemelk, in het centrum werd het hart van een licht gekookt eitje toegevoegd. Dit is een licht aangepaste versie van een gerecht gemaakt door 2 sterren Chef Stephane Buyens.

We zijn met twee personen dus openden we maar één fles witte wijn. De wijnselectie was het beste bij de frisheid van ons voorgerecht. We kozen voor een Italiaanse Corte Ibla uit Sicilie, een mix van Grillo en Franse Viognier druiven.

Inviting friends for home cooking dinner with very good ingredients and wine

The advantage of visiting good restaurants is that you collect ideas for when you invite guests. Our latest dinner evening at home, we started with Moët & Chandon Champagne and some aperitif bites containing: a tapenade of sun dried tomatoes, a crab salad and Iberico Ham filled with cold Foie Gras. Our starter was a Cous Cous cake with freshly cooked lobster and lobster tail, which was matched with Pascal Bouchard Chardonnay. The main course provided a trio of rabbit ragout, filet in potato crème sauce and filet in a brown beer sauce. The brown beer we used was the Trappist of West-Vleteren which was awarded the price of best beer of the world in 2005. As wine selection for the main course we had something really special, a Tertre Roteboeuf Saint Emilion Grand Cru of 1992. Such a bottle we only open for exceptional events. We finished our dinner with a trio of desserts: the chocolate mousse, a tiramisu and a fruit salad withpassion fruit and Mango. You can not imagine how lucky I am that Kristel is a super cook.

Het voordeel van goede restaurants te bezoeken is dat je ideeën verzamelt voor wanneer je gasten uitnodigt. Op ons laatste diner thuis, zijn we aangevangen met Moët & Chandon Champagne en enkele aperitiefhapjes bestaande uit: een tapenade van zongedroogde tomaatjes, een krabsalade en Iberico ham opgevuld met koude ganzenlever. Als voorgerecht serveerden we een Cous Cous taartje met verse kreeft en kreeftenstaart, deze werd vergezeld door een Pascal Bourchard Chardonnay. Het hoofdgerecht bestond uit verschillende bereidingen van konijn: een ragout, filet stukjes met aardappelcrème en filet stukjes in een bruine biersaus. Het bruine bier dat we hiervoor gebruikten was de Trappist van West-Vleteren die in 2005 de prijs won van het beste bier ter wereld. Als wijnselectie gingen we voor iets zeer speciaal: een Tertre Roteboeuf Saint Emilion Grand Cru van 1992. Zo’n fles doen we enkel open bij uitzonderlijke gelegenheden. We hebben het dinner afgesloten met een trio van desserts: een chocolade mousse, een tiramisu en een fruitslaatje van passievrucht en Mango. Je kan je niet inbeelden hoe gelukkig ik ben dat Kristel een uitstekende kokkin is..
